Pollack, Lettuce & Tomato Sandwich


1 x 110-140g Pollack Fillet
2 gem lettuce leaves
3 cherry tomatoes (halved)
tartare sauce
1 toasted bap
red onion (sliced)
salt and pepper
olive oil
salad leaves


1. Cut the bap open and spread a layer of tartare sauce across the top and bottom of the bun then add 2 gem lettuce leaves and 2 of the tomatoes.

2. Warm a little olive oil in a non-stick pan and add the Pollack, season and cook for 3 minutes until just cooked then add to the toasted bap.

3. Serve with seasoned chips and side salad.
