Moules a la Mariniere


1kg Fresh Mussels
Pinch of black pepper & thyme
Finely chopped onion
200 ml white wine
200ml whipping cream
Chopped parsley


1. Place mussels, pepper, thyme, onion and wine in a pan and bring to the boil. Simmer until all the mussels are open, discarding any that remain closed.

2. Add the cream and chopped parsley and heat through. Serve in a warmed dish
