Cajun Sardines

Ingredients

455g (1lb) sardines, cleaned and heads removed
1 x 15ml spoon (1 tablespoon) Cajun spices
1 x 5ml spoon (1 teaspoon) crushed chillies
1 x 15ml spoon (1 tablespoon) lemon juice
salt, to taste

lemon wedges, to garnish

Method

1. Preheat the grill.

2. Mix the Cajun spices together with the chillies.

3. Place the fish into a shallow dish. Sprinkle over the lemon juice and add the spice mixture and season.

4. Cook under a hot grill or barbecue for 8-10 minutes, turning once.

5. Garnish with lemon and serve with crusty bread and a cucumber and tomato salad.
