Prawn Salad

Ingredients

340g (12oz) large cooked, peeled, cold water prawns
125ml (4 fl oz) unsweetened apple juice
1 x tps white wine vinegar
1 x tps fresh mint, chopped
salt and black pepper
1 dessert apple, cored and chopped
1 nectarine, cored and chopped
115g (4oz) red or black grapes, seedless

Method

1. To make the dressing - whisk together the apple juice, vinegar, mint and seasoning.

2. Add the prawns and fruit to the dressing.

3. Mix well. Cover and refrigerate for 2-3 hours.

4. Serve on a bed of lettuce with crusty bread.
